Mediterranean Chicken Meatballs

Discover a simple recipe that will quickly become one of your favorites: Mediterranean chicken meatballs with rosemary and sage. Ingredients:
- 350g minced chicken
- 25g minced breadcrumbs
- 2 eggs
- 1-2 sprigs of rosemary
- about 8 sage leaves
- breadcrumbs to taste
- salt to taste
- pepper to taste
- sunflower oil for frying.
Preparation:

1 Remove the rosemary leaves from the sprig and chop them finely with a knife, then do the same with the sage, leaving it a little coarser. 2 In a bowl, add the minced chicken, breadcrumbs, chopped rosemary, an egg, salt and pepper and begin to mix the ingredients with your hands. 3 If the mixture is too moist, add breadcrumbs until the dough is soft but not slimy.

4 At this point, wrap the mixture in cling film and let it rest for about 15 minutes in the refrigerator. 5 In the meantime, break the other egg into a container and beat it vigorously. After 15 minutes, take out the mixture and start forming round meatballs with a diameter of about 4-5 centimeters 6 , rolling them between your hands.

7 Using a fork, coat the meatballs well with the egg. 8 Then transfer them to a tray with the breadcrumbs mixed with the sage and sauté the meatballs in the breadcrumbs so that they are completely covered. 9 At this point you can fry them for 4-5 minutes in sunflower seed oil at about 170°C.
Once golden brown, place them on a plate with absorbent paper and add another pinch of salt to the surface. Finally, serve them warm and enjoy!
Advise
- An extra boost : if you want to make these meatballs even tastier and more delicious, you can add a little grated parmesan to the mixture or insert a cube of semi-mature cheese inside the meatball.
- Pay attention to the temperature : for correct cooking and browning, check that during frying the oil temperature does not rise above 190°C otherwise you risk burning the breading before the meatballs can cook properly up to the center.
